Fajita Grilled Cheese

INGREDIENTS:

2 Slices Carbonaut bread
1 1/2 tbls Vegan butter
1/2 cup Vegan cheese shreds
1 Clove of garlic
1/4 cup Diced red pepper
1/4 cup Diced onion
1 tbls Diced jalapeno (optional)
1 tsp Chili oil (optional)
1 dash Cumin
1 dash Chili powder

As the weather starts to cool off, we want to heat things up a little with a spicy twist on the classic grilled cheese sandwich. Our Fajita Grilled Cheese recipe is loaded with veggies that pack in the nutrients! The heat level in this sandwich is up to you-add a little jalapeno or a lot, and if you’re really feeling spicy a little chili oil goes a long way!

This spicy sandwich pairs perfectly with a hot bowl of soup on those chilly days. Short on time? No problem, grab a bag of frozen fajita mix veggies and cut your prep time in half!

INSTRUCTIONS:

  1. In a medium skillet, sauté vegetables in olive oil, cumin, and chili powder until softened.
  2. Mix the crushed garlic with vegan butter and spread onto the outer side of each piece of bread. Place one slice on a non-stick pan over medium low heat, butter side down.
  3. Spread a thick layer of cheese, sautéed veggies and drizzle on chili sauce of your choice. Add remaining cheese and then place the second slice of bread on top.
  4. Let it grill until toasted and beautifully golden brown (about 3-4 minutes). Carefully flip the grilled cheese and continue to cook (about 2 minutes).
  5. When you reach a toasty golden brown, remove from the pan, slice and enjoy!
